I was looking around different forums and I keep hearing that the unlocked S8 had an "LTE+" designation in the top right hand corner next to the signal strength meter. My SIM card is about 5 years old. Do I need a new SIM card and/or different APN settings to allow for LTE+ on my Galaxy S9 (which I assume is LTE Advanced (channel bonding))?

Now I know that some things such as WiFi calling and VoLTE won't work on my unlocked version though hopefully it supports all the bands that AT&T uses.

I'd get it since it should be free at your local corporate store. Does the unlocked S9 support band 14 and 71?

No band 14, but it does support band 71.

Some are saying band 14 was a typo and that the s9 won't have it. Not sure what's true

The unlocked S9/S9+ does in fact support B14. From my experience, I suspect it will require an AT&T SIM to utilize it however. This is right from the FCC docs:
